Ingredients
Smart Balance Light (4 Tbsp)All-Purpose Flour (1/2 cup)Paprika (1 tsp)Salt (1/2 tsp)Black Pepper (1/4 tsp)Chicken Thighs (5, boneless-skinless)
Directions
* Heat oven to 425 degrees
* Melt Smart Balance in rectangular pan, 13x9x2", in oven
* Mix flour, paprika, salt and pepper
* Coat chicken with flour mixture
* Place chicken in pan
* Bake uncovered 30 minutes, turn and bake 30 minutes longer
* Remove from pan and let sit on plate 2-5 minutes before serving
(great with mashed potatoes and corn!)

    Made this for only two chicken breasts. Doubled the paprika and pepper. Tasted great. Couldn't keep the flour on the chicken in pan as well (used Pam for baking). - 12/4/07

    The breading tasted good but I cooked it for the time specified and the chicken was very dry and my breading was stuck. It did taste good though so I will try it again but cut down on the cooking time.
