Low Fat Zucchini & Walnut Bread

Ingredients:1 ½ cups flour½ teaspoon baking soda¼ teaspoon baking powder½ teaspoon salt1/2 tablespoon cinnamon1/4 cup of chopped walnuts1 cup sugar1/2 tablespoon vanilla1 cup canola oil OR ½ cup canola oil (or 1/4 cup coconut oil) and ½ cup applesauce2 eggs2 zucchini’s
1. Preheat oven to 325 degrees.
2. In a bowl, mix together flour, baking soda, baking powder, salt, cinnamon and sugar.
3. Then add the vanilla and oil and/or applesauce ).
4. Add 2 beaten eggs and mix well.
5. Add 2 shredded zucchini’s to mixture.
6. Add Walnuts and mix batter together well.
6. Grease a loaf pan and pour in the batter.
Let it bake for 65 minutes
