Chicken, Chick Peas and Spinach Masala

3 to 4 Chicken Breasts1 1/2 cup of dried Chick Peas (soak in water overnight)1 package of frozen chopped spinach1 Jar of Masala sauce from Trader Joe's1 cup chicken stock (or water)1 tsp Garam Masala dry spice1 Tbs. of Olive Oil1 or 2 cloves of chopped garlicsalt and pepper
The night before - place the chicken breasts in a ziplock bag with garlic, olive oil and garam masala spice, mix and store in refrigerator overnight. Place dry chick peas in water to soak overnight.
In the morning place all ingredients into crock pot (drain the water from the chick peas) and put on "low" for the day (hours depend upon your schedule). Enjoy with rice or bread. Makes 4-6 servings.
