Ingredients
1 Frigo light string cheese (or other brand)1/2 cup Fiber One sereal, crushed (may also use Panko bread crumbs)1/4 cup Egg Beaters1 tbsp Italian seasoning, to taste Salt and pepper, to tasteOptional: low-fat marinara sauce (for dipping)
Directions
Preheat oven to 375 degrees. In a food processor
or blender, grind Fiber One to a breadcrumb-like consistency. Place crumbs in a small
plastic container with a lid. Season crumbs with
as much salt, pepper, and Italian seasonings as you like. Set aside.

Cut cheese sticks in half, so that you have 2 sticks. Place sticks in a small bowl, and
pour egg substitute over the top of the sticks.
Swirl egg substitute around so that it thoroughly coats the sticks. One by one, transfer
sticks to the container with the crumbs. Cover
container, and give it a shake to coat the sticks in the crumbs. Carefully return sticks to
the dish with the egg substitute, and coat them
again. Next put sticks back in the crumbs container, cover, and shake once more to coat (try doing this two at a time the second time around). Place sticks on a baking dish sprayed lightly with
Olive oil. Spritz the tops of the sticks with a quick mist of the spray. Place dish in the oven, and bake for 10 minutes (or until the first sign of cheese oozing out). If desired, serve with warm
marinara sauce. Best when eaten immediately, while cheese is hot and gooey! Makes 1 serving. Nutrition info calculated without marinara dipping sauce.

After reading several comments, I decided to use italian bread crumbs and panko crumbs. I combined 1/4 cup of italian bread crumbs with 1/4 panko crumbs. I also used light mozzarella sticks that were 50 calories each. Overall, a pretty good snack since the majority of the calories were cheese. - 3/22/09

This absolutely is in the Hungry Girl Cookbook, 200 Under 200. That said, I have recipes in my spark cookbook that are from outside sources, but i am sure to reference the original source, "e.g ' from Cooking light, or Clean Eating, or another sparker's page". - 10/17/09

Who cares about where the credit goes to...this is not about the person who made the recipe, but more about sharing the recipe and obviously if there is a website it's open to the public...

I have not made this but I do assure you it is not in the HG cookbook (I of course HAD to buy it) But I dont recall this being in the book..and besides..not everyone knows about HG and I think it is quite alright to share! - 7/15/08

It's been my experience that anything breaded with the Fiber One cereal just doesn't taste that great .... too sweet for so many things. The Panko crumbs are a far better option, as are crushed cornflake crumbs, crushed Stove Top dressing mix, and crushed ready-made salad croutons. - 3/1/11

Good idea with the fiber, but the slightly sweet taste of the cereal ruins the flavoring completely! The texture wasn't bad, just the tate. I may try panko bread crumbs instead. - 7/8/08

I used a mixture of fiber one and panko; I agree that fiber one tastes too sweet sometimes, and this helps. I used this for chicken strips too! - 2/1/09

Ive made these and they are awesome. Just make sure that you use the regular plain fiber one cereal, not the ones with almonds or other flavors... - 5/11/10

    I substituted all bran garlic & herb crackers (18 = 120 cal/6g fat/5g fiber) and used WW string scheese (1=50 cal/2.5 fat)...they were OK. Satisfied the craving. - 7/9/08
