The Best Tuna Patty

Ingredients
Italian bread crumbs, 1/4 cupOnion, chopped fine, 1/8 cup (or 1 green onion)Carrot, shredded, 1 mediumCayenne Pepper, 1 pinchEggs, 2 largeParsley, dried, 2 teaspoons (or 2 tbsp of flat leaf parsley)Tuna, canned in water, 2 6.5oz cansExtra Virgin Olive Oil, 4 teaspoons
Directions
Mix all ingredients except the oil. Form mixture into 4 patties. Heat oil over medium heat. Sauté patties 4-5 minutes each side, turning carefully (they fall apart easily). Serve on whole wheeat buns or over toasted whole wheat bread.
