2 avocados2 tablespoons fresh gingerjuice and rind of one lime8 oz. young coconut water2 teaspoons white miso1/4 teaspoon cayenne or ground chili flakes1/4 cup basil leaves1 head of cauliflowerGarnish:green oniontomatocilantrograted carrot
CAULIFLOWER RICE
Process the cauliflower florets in a food processor until it has a rice-like texture. Transfer to a large bowl.
GINGER AVOCADO SAUCE
Rinse out processor and process the rest of the ingredients except the garnish until smooth. Pour sauce over rice.
GARNISH
Garnish with chopped green onion, cilantro, tomato, and grated carrot.
