Chocolate Pudding Cake with Walnuts and Chocolate Chips

3/4 cup Unbleached White Whole Wheat Flour1/3 cup Hershey's Special Dark Cocoa1/2 tsp Salt1/4 tsp Baking Powder1 1/2 T Canola Oil4 tsp Raw Sugar (melt in about 1/4 cup warm water)1/2 tsp Almond Extract1 Large Egg1 T Half and Half1/4 cup Mini Chocolate Chip Morsels2 1/2 T Chopped Walnuts1/2 T Unsweetened Shredded Coconut
Preheat oven to 350 degrees. Grease an individual-sized casserole dish, including the sides, and set aside.
Combine flour, cocoa, salt, and baking powder. Mix in oil, sugar and water mixture, almond extract, egg, and half and half. Add chocolate chips and walnuts.
Pour cake mixture into casserole dish. Top batter with dried coconut. Bake for 25-35 minutes, or until toothpick or chopstick comes out clean when poked into cake.
Let cool 15-20 minutes. Serve with ice cream, frozen yogurt, a glass of cold milk, or on its own! Enjoy!
