Tuna & Noodle Bake

2 Packages Tofu Shiratake noodles2 Cans Very Low Sodium Tuna, packed in water (or rinse)1/2 c fat free shredded Mozzarella Cheese1 lg pkg frozen vegetables of your choice ( I used mixed, but just broccoli and cauliflower would lower carbs more)1 C Egg WhitesRed pepper, season to your tasteSprinkling of Mrs. Dash Table BlendGarlic Powder ( if you like it)Onion Powder ( if you like it)
Empty Noodles into a strainer and rinse very well. With scissors, cut them into pieces while they are in strainer, as they are very long. Press water out of them with a paper towel. Empty the noodles and remaining ingredients into a large mixing bowl.
Stir
Pour into an 8x8 baking pan that has been sprayed with Pam.
Bake at 350 degrees about 45 minutes or longer. The top will look a bit crispy

Shiratake Noodles you usually find at a health food store. They are not pasta at all, it is Tofu but you would never know. They are crazy low in calories. Whe whole bag is only 40 calories. This much real pasta would be about 440 calories and a huge amount of carbs. This is the way to have your pasta but not the calories or carbs.
You can always add more egg whites or water and use less veggies for moistness. This dish really depends on how long you bake it. Everyone's oven is different.
