Apple Puff Pancake

Ingredients
6 large eggs1 cup 1% milk1 tsp vanilla1 cup whole wheat flour3 Tbsp sugar1/4 tsp pumpkin pie spice1/2 tsp salt2 med apples, cored and sliced3 tbsp brown sugar
Directions
Blend eggs, sugar and milk in a large bowl. Mix flour, sugar, spice and salt in a small bowl. Add to wet ingredients and mix until just blended. Prepare 9-inch baking pan with cooking spray. Arrange apple slices in pan. Pour batter over apples and sprinkle with brown sugar. Bake 20 mins in a preheated 425 oven.
