Ingredients

    3 links Turkey Bratwurst (Shady Brook Farms)
    3 small waxy potatoes, sliced
    1 medium onion, halved then sliced
    1/2 head red cabbage, sliced into ribbons
    1/2 bottle of beer
    1 tbs caraway seeds
    salt and pepper to taste

Directions

Place the bratwurst and beer into a large covered skillet. Braise approximately 10 minutes until the meat is mostly cooked. Reserve the cooking liquid. Chop each link into 8 pieces and set aside.

At the same time, boil the potatoes in water to cover until almost cooked.

Wipe the skillet clean. Add olive oil. Saute onion until just starting to brown. Add bratwurst and brown lightly. Approximately 10 minutes.

Add caraway seeds, cooked potatoes, cabbage, and reserved cooking liquid into the skillet. Simmer covered, stirring occasionally for approximately 10 minutes until the cabbage is cooked. You may need to add approximately 1/4 cup water at the beginning of cooking if the pot looks too dry.
