Introduction

I originally was going to make regular chicken and dumplings but I couldn't affrd all the cream soups and such, then i was making a two week batch of chili and couldn't fit all the ingredients into the pot so I added them to the crock pot! It is so yummy and hearty! I know my hubby is going to love it! Ingredients



    * Roasting Chicken, 3 pounds I got one whole and I cut it in half! After I boiled it I ripped off all the skin too!
    * Celery, cooked, 1 cup, diced
    * Carrots, cooked, 1 cup slices
    * *Bird's Eye Normandy Blend Frozen Vegetables, 3 cup
    * *Bell Pepper, Green, 1 large,
    * Bush's, Black Beans, 2.5 cup
    * *Diced tomatoes & Green Chillis Rotel, 10oz can 2.5 serv in can, one can
    * *Garlic 2 cloves chopped

    The Dumplings

    * *Flour, white, 2 cup
    * Baking Powder, 4 tsp
    * Country Crock, Shedd's Spread Country Crock Plus Calcium & Vitamins (Soft), 4 tblsps
    * *Whole Milk / Vitamin D, 1 cup

Directions

I cut a full size chicken about five pounds, in half! Then I boiled one half until it was fully cooked with the chopped celery and carrots. Then I pulled out the chicken and peeled off the skin then shredded all the meat off the bone and put it in the broth until it finished cooking.

WHile that was cooking, I added the full bag of Normany blend veggies to the crock pot along with a can of black beans, a can of rotel chiles and tomatoes. Then when the chicken is finished cooking I dump it in the crock pot with everything else, water and all, because now its a yummy broth!

I add salt and pepper to taste and two chopped garlic cloves! Then I turn it on high and I cook the pepper and onions until they are tender and smelling good! Then add them in to the crock pot! I cover it for about 4 hours then put it on low for another 4!

at the last half hour, I mix up the dumplings. I put 2 cups of flour with 4 tsps of baking powder, 4 tblsps of butter, and 1 cup of whole milk. I like to add some black pepper too!

I mix it all together and drop teaspoons all over the top of the stew in the crock pot, don't worry about how much their is, it will all cook! after it is al on, mostly stuck together, I cover it up for the half hour. When it is all done you can leave it on top of you want, or do what I do and stir it all into smaller peices and mix it through out the stew! SO GOOD!
