Ingredients
1 Egg2 Egg Whites (or 1/2 c liquid egg whites)1/4 c Red, Yellow, Orange Bell Peppers chopped1 oz White Ground Turkey meat (previously cooked & seasoned)2 Corn TortillasOptional: low fat cheese, salsa
Directions
Heat non-stick pan (medium heat) with alittle water. (optional: non-stick spray)
Add chopped bell peppers
In a bowl, Mix 1 egg with 2 egg whites.
Add eggs to peppers in non-stick pan. Turn heat low.
Stir constantly until eggs are no longer wet.
Re-heat turkey. (microwave or pan)
Heat tortillas (your favorite way...tortilla iron pan or microwave)

Build your tortilla:
Scoop turkey onto tortilla, scoop eggs on turkey.
Fold and enjoy your tacos.
