Creamy Fettuccine

2 cups fat free half and half8 oz light cream cheese1 cup grated parmesan cheese1/4 cup of smart balance butter1/2 tsp. kosher salt1/2 tsp. freshly ground pepper16 oz. fettucine1/2 cup chopped proscuittochopper parsley for garnish
Makes 8 servings
Cook fettucine according to directions. Drain, rinse and set aside.
In a large saucepan over medium high heat combine the butter, half and half, Parmesan, cream cheese, salt and pepper. Using a whisk stir gently until cream cheese has melted, about 2 minutes. Continue to simmer over low heat until sauce is thickened, about 10 minutes.
Pour sauce over noodles in a large bowl. Stir in thawed cooked peas and procscuitto. Garnish with fresh parsley.
