Ingredients
6 egg whites2 whole eggs1 cup leeks, sliced 1 cup red peppers, cut into strips5 oz. fresh baby spinach
Directions
cook vegetables in non stick cooking spray in a skillet until vegetables are tender. Meanwhile crack eggs in a bowl and combine with veggies when done. Spray Pam into a pie plate and pour mixture into plate.Cook for 45 minutes or until eggs are cooked through.
