1 medium-size cucumber1 tsp finely chopped parsley1/4 tsp dill1/4 tsp finely chopped basil1/2 tsp finely chopped chives3/4 c low-fat, low sodium cottage cheese
Cut cucumber in half lengthwise. Hollow center of each half by scooping out seeds with spoon or vegetable knife. Stir herbs into cottage cheese, then arrange in hollowed cucumbers.
