Double Stuffed Peppers

Ingredients
Simple: One Pepper, Four Mushrooms per Pepper, a small amount of feta, two teaspoons olive oil, 1/3 cup peas, 1/2 tablespoon butter, 1/3 cup butter, and that's it
Directions
First prep your mushrooms: Pull the stems and put a little feta in them. ( a little soy sauce or garlic salt helps bring out the flavor.) Simmer them on low until cheese melts.

Then, put your Cream Cheese, 1 Teaspoon Olive Oil, 1/4 tablespoon butter, and 1/3 cup milk in sauce pan, medium low heat.

Let both of these cook about 10-15 minutes.

While their cooking cut the top of your peppers, de-seed and rinse. Put two or three Asparagus spears in the pepper.

When the mushrooms have browned and the cheese has melted remove them from the pan, and replace with spinach. At this point, add the peas to your Cream Cheese Sauce.

Turn Oven On Broil. Pour Cheese sauce into Peppers, add four stuffed mushrooms to the top, put a little bit of cheese over the mushrooms (shredded, more feta, or blue cheese) and broil for two minutes.

Use the spinach as a garnish and there you go, killer meal!!!
