Golden Potage- Soup

Ingredients
1 small onion, chopped4 tsp olive oil8 cloves garlic, minced3 pounds chopped mixed root vegetables (such as carrots, parsnips, turnips, sunchokes, celeraic)6 cups vegetable stock3/4 cup half and half
Directions
-In large pot saute onions in oil
-add chopped roots and garlic, saute for 10 min
-add vegetable stock and bring to simmer
-simmer until vegetables are tender (approx 30 min)
-Cool soup to lukewarm, then puree in blender or with immersion blender until smooth
-Whisk in half and half and return to simmer for serving

    This is really delicious and you can buy a package of all the vegetables you need at Kowalski's markets in MN, which is where I first saw the recipe. I make it vegan with soy creamer and add a dash of sriracha pepper sauce. Yum! - 2/2/12
