Pina Colada Muffins

Ingredients
1/2 cup unsweetened coconut flakes2 eggs1/2 cup milk1/2 cup canola oil1 tsp vanilla1 ripe mashed banana1/2 Splenda brown sugar blend1 cup whole wheat flour1 cup Quaker quick oats1 cup Fibre One Cereal1/2 tsp salt1 tsp baking powder1 tsp baking soda1/2 cup of pecans12 chunks of fresh or canned pineapple2 tablespoons of Soy protein isolate (optional)
Directions
Lightly toast coconut on a cookie sheet in the oven.

Measure and mix flour , fibre one, oats and baking powder, salt and soda.


Mash banana and add to beaten eggs, milk and oil. Add vanilla. Beat in Splenda.

Mix lightly with dry ingreidients and then stir in nuts and coconut.

Divide into 12 muffin tins and then place a chunk of pineapple on each muffin.

Bake at 350 for about 20 - 25 minutes.

The soy protein isolate is optional and I add two tablespoons to the dry ingredients to boost the protein in these muffins. Calories have been included.

Makes 12 good sized muffins

    Yummy. I did alter it though; 1/2 c unsw applesauce in place of the canola oil; 2 Tbsp honey in place of the Splenda; 1/2 c crushed pineapple with juice instead of the chunks; replaced pecans with 1 Tbsp flax seeds. My version could be sweeter, but I liked it. Only 170 calories. 12 large muffins. - 9/6/09
