Pumpkin Wheat Honey Muffins

Ingredients
1 1/2 C Whole Wheat Flour1/2 C brown sugar, packed1/2 t baking soda3/4 t baking powder1 1/2 t pumpkin pie spice1/2 t salt2 eggs1 C pumpkin puree1/2 C unsweetened applesauce1/2 C honey1/2 C chopped pecans
Directions
In large mixing bowl, combine flour, brown sugar, baking soda, baking powder, pumpkin pie spice and salt. In separate bowl, whisk together eggs, pumpkin, applesauce, and honey. Add pumpkin mixture and pecans to dry mixture. Stir by hand until just blended.

Bake at 350 for 18-20 minutes. Makes 12 muffins.

Note: To reduce fat and calories, omit the pecans and use 3 egg whites instead of 2 whole eggs.
