Green Beans & Potatoes in Tomatoe Sauce

Ingredients
Green Beans (snap), 6 cup (remove)Onions, raw, 1 cup, chopped (remove)Garlic, 3 cloves (remove)*Potato, raw, 8 small (1-3/4" to 2-1/2" dia.) (remove)Tomato Sauce, 1 cup (remove)Olive Oil, 4 tbsp (remove)Pepper, black, 1 tbsp (remove)Parsley, 2 tbsp (remove)Peppermint, fresh, 2 tbsp (remove)Water, tap, 4 cup (8 fl oz) (remove)Salt, 1 tbsp (remove)
Directions
1) Wash and strip green beans of strings.
2) Saute onions and garlic. Once they are soft add tomatoe sauce. Let simmer for 5 minutes.
3) Add green beans, potatoes, water and seasonings in pot. Simmer for 30 mins. on medium heat.

    I make a greek version of this with fresh tomatoes, onions and fresh green beans, about a pound, but for seasoning I use Dill instead of the peppermint. Also use oregano too. This is a keeper for any vegetarian menu, I think! - 9/15/10
