3 egg whites2 c Spinach, fresh1/2 c Fire Roasted Red Peppers3 - 4 Red Ripe Tomatoes, sliced, medium (1/4" thick)Provolone Cheese, 1 slice (1 oz) 1 tsp Extra Virgin Olive Oil
place olive oil in suate skillet, heat on low/med heat. pour egg mixture into pan heat until eggs start to form add, provolone cheese, spinach, roast red peppers and tomato slices. Fold, heat through and serve. makes one serving
