Salmon Loaf

Ingredients
1/2 cup bread crumbs2 eggs, slightly beaten1/2 cup milk1 can salmon, drained and flaked1 tsp lemon juice1/2 tsp saltDash pepper1/2 tsp sage2 tsp finely chopped onion1 tbsp chopped parsley1 tbsp melted butter
Directions
Combine ingredients in order given. Pack firmly into buttered loaf pan and bake at 350 for 30-40 minutes. Turn out onto platter and garnish with sliced hard-boiled egges and sliced pickles.

    So nice, hubby asked me to do it often. How big is a "can of salmon" anyway, on the ingredient list it shows 1.2 can pink salmon. I think two of the flat cans 220 grams each. This time I used organic spelt flakes instead of crumbs, a whole small onion, and added a Tablesp of Worchester sauce - 8/18/09

    Very similar to my recipe, but love the zing of the onion, spices and like another sparker, I added the worchestershire sauce. I left off the hard boiled egg & dill though... served with a bit of salsa instead. - 3/25/10
