1 pound halibut1/2 cup dry vermouth1 Tablespoon Orange peel1/4 cup orange juice1 teaspoon lemon peel2 Tablespoons lemon juice2 Tablespoons olive oil1 Tablespoon shallots1 Tablespoon parsley1/4 teaspoon saltdash black pepper
Combine all ingredients except fish. Mix thoroughly. Arrange fish fillets in dish which allows marinade to coat all sides. cover and refrigerate for 1 to 2 hours.
Remove fish and strain & reserve the marinade
Transfer strained marinade to 10-inch skillet, bring to a boil
Add fish. Reduce heat and cover & simmer 5-7 minutes or until fish flakes easily.
Remove fish to serving plate and if necessary continue boiling down the pan ingredients until of good consistency to pour over fish.
