1 1/2 cups flour2 tbsp wheat germ2 tbsp milled flax seed1/2 cup sugar2 tsp baking powder1/4 tsp salt1 cup chopped cranberries1/2 cup chopped walnuts1/3cup almond milk1/3 cup orange juice2 tbsp olive oil1tsp orange zest1/2 tsp vanilla extract1 large egg
Preheat oven to 400, combine the dry ingredients in a medium size mixing bowl, stir in cranberries and walnuts then make a well in the center.In a seperate bowl, slightly beat the egg, then combine the orange zest and remaining wet ingredients now gently stir into dry ingredients just until moist. begin spooning into greased muffin top tins and bake for 20 minutes. Remove muffins fron tin and place on a cooling rack.
