Blueberry Muffins

Ingredients
1 cup oatmeal1 cup whole wheat flour1 teaspoon baking powder1/2 teaspoon baking soda1/4 salt1/2 teaspoon cinnamon1 tablespoon flaxseed meal2 tablespoon water1/2 cup 1% milk1/4 cup unsweetened applesauce1 teaspoon vanilla1/4 cup brown sugar1 cup frozen blueberries1/2 cup chopped walnuts
Directions
In large bowl combine oats, flour, baking powder, baking soda, salt and cinnamon. In small bowl combine flax seed meal and water and mix until it thickens up a bit. Add milk, applesauce, vanilla, and sugar to flax seed mixture. Add the wet mixture to the dry mixture and gently fold together. Gently stir in blueberries and nuts.

Spoon into prepared muffin tins and bake for 20-25 minutes @ 400 until toothpick comes out clean.
