Banana Carob Chip Cookies with Crystallized Ginger

2 1/4 C Flour1 tsp Baking Soda1 tsp Salt1/4 tsp Cinnamon, Ground1/2 C Brown sugar1/2 C Butter, unsalted, melted and slightly cooled1 Egg, large1 tsp Vanilla2 Bananas, mashed1 C Carob Chips (or chocolate chips)1/2 C Crystallized Ginger, minced
1. Preheat the oven to 375 degrees with an oven rack set to the center position.
2. Whisk together the flour, baking soda and salt. In another bowl by hand, mix together sugar, melted butter, egg and vanilla until well-blended. Stir in the mashed banana. Stir the wet ingredients into the dry until nearly incorporated, then fold in the chips and ginger.
3. Portion tablespoons of dough onto baking sheets, 12 per sheet. Bake one sheet at a time for 12-16 minutes, or just until golden brown. Don't overbake. Cool completely on the baking sheets or a wire rack. Store in an airtight container at room temperature.
Makes 36 cookies.
