Mike's enchilada casserole

Ingredients
Brown up some a lb of Ground turkey, 93% and mix in a packet of taco or burrito spices.In another pan, add the olive oil and put in a cut up Bell Pepper (Red) and 1/2 of an onion and saute them.In a 9x13 pan put down 2 tortilla shells and add a little enchilada sauce on top. On top of this place your turkey, onion & red peppers.Time for the next layer of tortilla shells, but before you place them, I put the re fried beans on the tortillas. easier to spread when they are on a plate than already in the pan.On top of the beans and your can of Rotel tomatoes & chilies.Finally put on your last layer of 2 tortillas, cover the entire thing with the rest of your enchilada sauce & top with a bay (1.75 cup) of 2% cheese.Put it in a preheated oven for 45 mins. Sooooo tasty :). Optional toppings of FF Sour Cream & Tabasco.

    Ignore the (remove) words in the ingredient list. This was really tasty and I liked the beans being in the casserole. It does take quite a while to prepare though! - 12/2/10
