1 c. Whole Wheat Flour1 c. Unbleached or White Flour1/2 c. Agave Nectar1 1/2 tsp. Baking Powder1 tsp. Salt1/2 tsp. Baking Soda3/4 c. Orange Juice3 TBSP. Flax Seeds1 TBSP. Olive Oil2 Egg Whites, well beaten1 1/2 c. fresh cranberries, chopped in half1 c. Walnuts, chopped
Preheat oven to 350. Grease muffin tins (20 min. baking time) or loaf pan (50-60 min. baking time) Mix dry ingredients and sift in bowl. Mix all liquids together in different bowl. Hand stir dry and wet ingredients together. Stir in cranberries & walnuts. Be sure to buy fresh cranberries during the Thanksgiving/Christmas seasons and freeze to have this recipe year round. Serving size: 1 muffins or 1/12 of loaf pan.
