Becky's Salsa, Corn Black Bean Soup

Ingredients
* *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" chopped in large pieces * Pepper, red or cayenne, 1 tbsp * *anaheim pepper, 0.05 cup * *Red Onion (1 srv = 1 med onion), 1.5 serving * *Corn - Whole Kernel Sweet Corn (Green Giant), 1.5 cup * *SWANSONŽ Vegetarian Vegetable Broth, 100% Fat Free, 14 oz (396g) can, 2.5 cup * Beckys AMAZING Salsa, 4 serving * Beans, black, 6 cup ( I used a 16 oz pk of dried beans)
Directions
soak 16 oz pkg of dried black beans overnight (makes 6 cups after soaking/cooking)
rinse, then put in a pot to cook on stove, add cumin, black pepper and cayenne pepper bring to a boil boil for 5 min, cook over med. heat for approx 2 hrs.
in crock pot add corn, vegetable broth, red pepper, and Anaheim pepper
When beans are done, drain. add 4 cups to crock pot, use the additional 2 cups in food processor/blender to puree.
add to cock pot, along with salsa.
add 1/2 small red onion to food processor/blender to chop finely , add to crock pot. cook on high for 3-4 hrs
