2 c, chopped onion5 cloves garlic, minced1 carrot, chopped1 stalk celery, chopped2 c. sunchokes, chopped (no need to peel)2 T EVOO2 lbs broccoli, chopped2 T. ginger, grated3 T. mustard seeds, black8 c. homemade vegetable broth1 c. Fage 0% yogurt1 T. cumin2 t cayenne juice of 1 lemon2 t Worcestershiresalt and pepper to taste
Cook onion, garlic, ginger, celery, carrot, mustard seed, cumin, & cayenne in EVOO over moderate heat til soft. Add broccoli, broth, & sunchokes and simmer 25 minutes or until the broccoli is very tender. Puree in or with blender. Add lemon juice and yogurt. Makes 8 2-cup servings.
