LA (Lower Alabama) Burrito

4 lrg Whole wheat tortillas2 cups Cheese grits8 oz Lean smoked ham8 oz Extra sharp cheddar cheese1 cup Strong black coffee, hot1 cup Canola oil
1. Microwave the tortillas for 30 seconds or just until pliable.
2. On the bottom third of each tortilla spread ½ cup cheese grits, 2 ounces of ham and 2 onces of cheddar. Roll into a burrito and put into a Panini press or medium-high skillet and cook until toasted.
3. Combine the hot coffee and canola oil to make red eye gravy. If the gravy is hot enough microwave it in 10 second intervals until hot.
4. Dunk the burrito in the gravy as you eat.
