Crockpot Chicken Adobo

Ingredients
1 small sweet onion, sliced10 cloves garlic, crushed3/4 cup low sodium soy sauce1/2 cup vinegar (1/4 cup each rice and red wine vinegar)10 boneless, skinless chicken thighs (2 packs from costco)2 tablespoons brown sugar1 tablespoon minced ginger1 tablespoon black peppercorns2 bay leaves
Directions
Place chicken in a slow cooker. In a small bowl mix the onion, garlic, soy sauce, vinegars, ginger, peppercorns, brown sugar, and bay leaves and pour over the chicken. Cook on Low for 6 to 8 hours.
