Tarragon Taters

Ingredients
2 long sweet potatoes, peeled and sliced7 small to med baking potatoes, peeled and slicedAbout one large or two small onions, peeled and sliced1/4 cup canola oilsalt, pepper, onion powder to taste1/2 teaspoon ground tarragon
Directions
Peel and slice all potatoes and onions (a food processor slicing blade makes the slicing go much faster). Spread them in a large baking dish. Pour the oil over them as well as the seasonings, and then mix with your hands to make sure everything is evenly coated with oil and seasonings. Bake at 400 for 45 minutes. Makes about twelve 3/4 cup servings.
