Thai Pasta with Shrimp

2 tablespoons Reduced Fat Peanut Butter1/4 cup low sodium soy sauce1/4 cup low sodium chicken or vegetable brothjuice of one limecilantro3 scallions1 tsp ginger1 tsp red pepper1 clove garlic6 oz vermicelli
Makes 4 servings
Prepare pasta according to directions on the package.
Prepare Shrimp according to directions on the package.
Mix peanut butter, soy sauce, broth, red pepper, ginger, garlic, and the juice of one lime in a small pot. Cook over med-low heat until peanut butter melts and mixes with other ingrediants.
Mix pasta, shrimp and sauce together in a large bowl. Mix in fresh cilantro and scallions.
Serve with a wedge of lime and enjoy!
