Creamy Shrimp Pasta

Ingredients
8 ounces fettucine1 pound medium shrimp, fresh or frozen1 (8-oz) package Neufchatel reduced-fat cream cheese1 cup chicken broth5 ounces frozen spinach, thawed and excess moisture removed1 cup Parmesan cheese, grated2 cloves garlicsalt & pepper to taste
Directions
Cook fettuccine as directed on package

Meanwhile, heat large skillet or pat to medium-high heat.

Add cream cheese and chicken broth, cook stir 3 to 4 minutes until cream cheese is melted and mixture is blended well.

Add Parmesan cheese, garlic and salt & pepper to taste.

Add shrimp and stir until cooked thru (if using frozen shrimp, until heated thru). Add spinach and stir well.
Drain pasta; place in a large bowl.
Stir in shrimp mixture.

ADD INS- Toss in 2 medium tomatoes for taste and color!

    I just loved it. Adjusted the parmeganto 3 tablespoons. douoble the amount of spinach, used 13 3/4 oz of pasta it was enough for 6 people. It will be a regular in my house - 4/28/09

    Quick & easy! My family enjoyed this, they didn't even realize it was a healthy version. I used a 14 oz can of chicken broth and broccoli instead of spinach. Sauce was kind of thick, next time I will use less parm cheese. The sauce will make a good base for other pasta dishes also. - 3/14/09

    This was very good....I tried to lighten up calories so used only 1/2 the cream cheese, and substituted fat free sour cream. Added some red pepper and extra garlic, for flavor, and served with whole grain penne pasta. Everyone loved it! - 3/18/08

    My teenage son made this for dinner tonight and we loved it! He sauteed fresh spinach in garlic instead of using frozen. It was a filling meal, and we will use the sauce with broccoli and chicken next time. - 6/14/09

    Excellent! I altered it a bit... I sauteed garlic (a bit more than specified since we are garlic lovers), basil, sun dried tomatoes & 1/4 onion in a bit of oil from the sun dried tomatoes. I used less parmesan, low fat cream cheese, fat free chicken broth & Barilla Plus multigrain spaghetti. :-D - 7/9/10

    Oh my!! I started with sauté of garlic and fresh spinach in a bit of olive oil...a pinch of red pepper flakes, then added cream cheese, broth, parm followed by shrimp, then pasta. I think I only had about 1/2 cup parm and that seemed to be plenty. You can always garnish with a bit more. Great! - 7/12/12

    Oh, so good! But when I checked it in my nutritional tracker, I discovered that it was high in Cholesterol. My fault, I should have checked before making the recipe. So, for a treat once in a whil,e great, but not too often! - 10/6/10

    I used 1/2 container of low fat cream cheese and 1/2 container of Fat Free cream cheese with low fat Parmesan cheese cutting the calories even more and it was great! Paired with a salad it was easy and fast not to mention the taste was incredible. - 5/4/08

    Pretty good. My husband and I liked it, the kids not so much. Next time I will use a little less parm and try it with chicken and mushrooms. I also used light parm and light cream cheese to lighten the cals a bit. Thanks for posting the recipe :) - 5/11/09
