Crab Newburg

Ingredients
Butter or margarine (4T)All purpose flour (2T)Evaporated milk or light cream (12oz)Egg yolks, beaten (2)Crab meat, cut into small pieces (8oz)Water (1.5 T)Lemon juice (1.5 T)Salt (1/4 t.)Paprika (Garnish)Wheat bread (4 slices - toasted)
Directions
Melt butter in skillet; blend in flour. Add milk/cream all at once. Cook, stirring constantly until sauce thickens and bubbles.
Stir small amount of hot mixture into beaten egg yolks; then add yolk mixture back to hot mixture; cook, stirring constantly, until thickened. Add crab; heat through. Add water, lemon juice and salt.
Serve over toast and sprinkle with paprika.
You may also substitute lobster or shrimp for the crab, and may use dry white wine in place of the water.
