Shredded Chicken and Lentil Stew

2 cups lentils1 lb chicken, no skin, fat removed8 cups water2 t chicken bouillon1 med onion, diced4 green onions, sliced3 cloves garlic, minced1 large tomato, diced1/2 red pepper, diced1 T chili powder1/2 t sea salt2 T fresh cilantro, chopped
Add all ingredients to a large stockpot, bring to a boil. Turn heat to low, and simmer together in a large stockpot for 15 minutes, or until chicken is cooked through. Remove chicken from pot, allow to cool briefly and shred chicken. In the meantime, allow the lentils to continue simmering. Return shredded chicken to pot and simmer until lentils are soft, about another 20 minutes. Serve, sprinkle with some chopped cilantro, and enjoy!
