Baked Spinach Mushroom Turkey Sausage Frittata

1 package of spinach, drained well12 large Eggs, beaten1 package of Louis Rich Turkey Sausage1 cup of chopped freash mushrooms1/2 cup of chopped onion2 Tbls of Olive Oil (EVOO)1 cup shredded reduced fat sharp chedder cheese
Preheat oven to 350
On stove top in cook turkey sausage in 1 tablespoons of olive oil until browned, add in chopped onions and chopped mushrooms. Cook until onions and mushrooms are tender. Add drained spinach and cook on low for about 3 minutes. Let cool.
In a 9 x 13 casserole dish add 1 tablspoon of olive oil and spread on bottom and sides of pan. Sprinkle the sausage mixture in bottom of pan, sprinkle with 1 cup of cheese. Top with beaten eggs. Bake for 30 t0 45 minutes, until fully cooked. Let cool and cut into 8 serving pieces. Freeze for a quick microwave breakfast (thaw in frig the night before).
