lap-band Friendly: Red Pepper and Tomato Hummus

Ingredients
1/4 cup sun dried tomatoes, soaked if dried 1/4 cup red roasted peppers (jar)1 15oz can garbanzo beans, rinsed2 cloves garlic, pressed2 Tablespoons tahini paste2 Tablespoons olive oil1/4 cup water1 teaspoon of salt
Directions
Drain and Rinse the Garbanzo Beans several times until they no longer foam up.

Place Peppers, tomatoes and garlic in a food processor and blend about 30 seconds.

Add Garbanzo beans and blend for 1 to 2 minutes

Add tahini paste, olive oil, water and salt and blend until smooth.
