Liz's Turkey Soup

Ingredients
2 cups fresh mushrooms sliced1.5 - 2 cups celery sliced1 bunch fresh baby carrots with tops sliced (chop some of the green to add color and flavor)3 small leeks sliced and rinsed well1 can white beans (I use cannellini beans)3 tablespoons olive oil2-3 cups of turkey meat (I used dark meat)salt and pepper to tasteoptional fresh sage finely chopped
Directions
Saute mushrooms in olive oil, add leeks, celery and carrots. Saute until tender. Salt to taste (I also added fresh sage and carrot greens for flavor and color). Add turkey and chicken broth. Simmer for 30-60 minutes. Season to taste with additional salt and pepper. Freezes well.
