1 can White beans-rinsed and drained1 can diced tomatoes- drained2 cans water2 medium zucchini peeled and cubed1 small onion- chopped1 Tbs. coarsely chopped flat leaf parsley1 clove garlic minced1 Tbs. olive oilItalian seasoning and pepper to taste
Heat olive oil in pan, saute onions, do not cook until translucent. Add beans, tomatoes, water and remaining ingredients. Simmer for about 30 min.
Makes about 6-8 1 cup servings.
