Healthy (er) Rotel Dip

Ingredients
Cream Cheese, 8 oz blockColby jack cheese, 8 oz, 2 cups shreddedMilk, 1/4 cupSea salt, 1/2 tspGround turmeric, 1/4 tspRotel, one 10-oz can, undrained
Directions
In a 1.5 quart saucepan, melt cream cheese and milk together over medium heat. When smooth, whisk in 2 cups colby jack cheese, sea salt, and turmeric. Continue to whisk cheese together until it has reached a smooth, creamy consistency.

Stir undrained Rotel into cheese. The cheese will start to solidify. This is okay. Continue to stir Rotel dip until the cheese is once again smooth. Reduce heat to low and cover until ready to serve. You can also make this dip using the same method in a small crockpot (or fondue pot) set on low.

Serve Rotel dip with tortilla chips, cut up veggies, or both.

Makes about eight 1/2 cup servings.

    I'm not sure this would qualify as "healthier" - it has more calories, more fat, same amount of protein as the velveeta. The only thing where it might be considered healthier is that it's got about half as much sodium. - 12/31/12
