Asian Cabbage Salad

1 recipe Peanut Butter Dressing (see below)6 C. packaged shredded cabbage with carrot (coleslaw mix)1 C. fresh sugar snap peas trimmed and thinly sliced lengthwise1/2 C coarsely shredded peeled jicama1/4 C. thinly sliced green onions1/4 C. sliced almonds, toastedFresh cilantro optionalPeanut Butter dressing. In a large bowl combine 1/3 c. peanut butter, 1 tsp. curry powder, 1/2 tsp. each: salt, garlic pwder, and ground ginger; gradually wisk in 1/3 c. water, 2 T. lemon juice, and 2T. olive oil until smooth.
1. Prepare Peanut Butther Dressing , Toss shgreeded cabbage, peas, jicama, and green onions with the dressing . Cover and chill for 30 to 60 minutes.
2. Just before servicng , sprinkle with toasted almonds and clinatro. Makes 6-8 servings
