3 cups flour2 large eggs1 cup water10 oz. swiss cheese shredded1 Tbsp. olive oil1 large onion sliced (optional)salt to taste
Boil large pot of water. Add salt. Combine flour, eggs, and water. Using a spatle squeeze or press, (mine is old and came from my mother-in-law so I don't know the actual name of it) lay it across the pot of boiling water, scoop flour mixture into top part and slide back and forth so that the mixture is squeezed out of the bottom and into the boiling water. Boil for 5 minutes. With slotted spoon, remove noodles and repeat until mixture is gone (I usually divide it in half). Add noodles to shredded cheese. Add salt to taste.
While noodles are cooking, you can slice onion and fried in olive oil in pan until tender and golden brown.
When all is done, place a helping of noodles on plate, spread onions on top and enjoy!
This recipe goes well will creamed spinach and applesauce.
Makes about 8 1-cup servings.
