Asian-Inspired Pork with Rice

Ingredients
1/2 c. dry brown rice (makes 1 cup cooked)6 oz. ground pork1 package Asian-style frozen vegetables, thawed and drained2 tsp. soy sauce
Directions
Cook rice in 1 cup water. Brown ground pork in large skillet over medium high heat. Add thawed and drained vegetables. Cook until veggies are heated through and tender. Add rice, stir together, and cook 5-6 minutes more. Portion out onto 2 plates and add 1 tsp. soy sauce to each serving.
