Sugar Free Blackberry Oatmeal Muffins

1 Cup Old fashioned Oats (Not the Quick Kind)1Cup Vanilla Soy Milk1 TSP Vanilla Extract1/2 Cup Applesauce Unsweetened1/4 Cup Egg Substitute or Egg Whites1 Cup Whole Wheat Flour2 TBSP Wheat Germ1 TBSP Cinnamon1 TSP Baking Powder1/2 TSP Baking Soda1/2 Salt1/2 CUP BlackBerriesLots of Love
Soak your oats in the soy milk and vanilla extract for an hour.
Turn on Oven to 400 degrees.
Line muffin tin with muffin wrappers (they will stick!)
Mix the oatmeal with the applesauce and egg whites.
In a seperate bowl add all the dry. I sift it so the flour is fine.
Mix wet and dry, add in Blackberries smashing them up a bit.
Spoon mix into muffin tin, should make 12 muffins.
I have added a sprinkle of Turbino sugar to give a sweet crunch but any will do if you so feel inclined.
Bake for up to 20 minutes, it only take about 17 in my oven so I check them at 15minutes.
When they are done take them out to cool.
Eat them up Yum!!!
