Fajita Tacos

Ingredients
3 medium chicken breasts2 cups onions, sliced2 tsp paprika2 tsp salt2 tsp cumin3 cloves garlic, mincedcorn tortillas2-1/2 tbsp olive oil
Directions
Heat oil on medium high and cook onions until browned.
Chop the chicken breasts into small, bite-sized pieces and add to onions.
Season with paprika, salt and cumin, making sure the chicken and onions are evenly coated. Cook until chicken is browned but tender.
Add minced garlic and cook for approximately 1 more minute. Reduce heat to low.
Heat another skillet and add one or two tortillas, depending on how big the skillet is. Heat until tortilla is lightly browned on each side.
Serve with sour cream, salsa, guacamole and/or hot sauce. Enjoy!!!

    I cut the chicken in strips, omitted the salt and added the juice of 1/2 lime to create a marinade and let it sit at least an hour. Grilled the chicken [no oil] with onion slices and pepper strips. Way lower calories! Way flavor, fiber and veggies too! - 3/5/11

    Really liked these....I normally don't measure the spices so I didn't put enough on the chicken. We added lettuce,tomato,shredded cheese and a little sour cream. They were a lot more filling than I thought they would be! - 5/19/09

    These were excellent! My boyfriend and I had them for dinner tonight. The only thing I did differently was that instead of cooking the chicken with the onions, I boiled the whole chicken breasts and then pulled the chicken. It worked great. - 1/9/08

    I used 3.2 oz of the chicken mixture and 1 T. salsa for each tortillas and it makes 10 servings of 1 tortilla each. I deleted the salt totally, not needed for people with HBP. We need better tasting corn tortillas in our area, otherwise it was very good. Wonder if you could add green peppers, etc - 4/11/09

    I've made this but had to change the ingredients and tweak it a bit. I used an olive oil spray instead of all that oil and NO salt. Experiment with spices (esp. chili) and you won't need the salt. I used a whole wheat wrap instead of the tortilla and salsa instead of sour cream. - 12/28/07

    Squeezing a lime (or lemon) wedge over the finished meal can help prevent the need for the salt. Slicing part of an avocado over the fajita can add healthy fats (in moderation). I love fajitas. - 3/31/09
