Breakfast Veggie Quiche

Ingredients
6 large eggs, beaten1 cup part skim ricotta cheese2 cups chopped veggies (asparagus, broccoli, spinach, zucchini, etc)1/2 cup grated cheese (parmesian, cheddar, smoked gouda, feta, etc)salt, pepper other seasonings, to taste.
Directions
Heat oven to 350
Put eggs, ricotta, seasonings in mixing bowl.
Use mixer or hand blender to mix until smooth
Grease pie pan w/cooking oil spray
Sprinkle half of the grated cheese on bottom of pie pan
Pour in egg ricotta cheese mixture
Drop in asparagus chunks, trying to distribute evenly.
Press asparagus chunks down into the egg mixture.
Sprinkle other half of grated cheese on top and bake for 35 -40 min until golden brown and no liquid remains when tested w/a knife in center.
