Apple Muffins with Walnut Streusel Topping

Ingredients
Muffin Ingredients2 c. flour1/2 c. Splenda3 tsp. baking powder1/2 tsp. salt1 tsp. cinnamon3/4 c. milk, nonfat1/3 c. canola oil1 eggWalnut Streusel Topping1/4 c. brown sugar1 tbsp. soft butter1/2 tsp. cinnamon1/4 c. chopped nuts
Directions
Heat oven to 400°F. Line 12 muffin cups with paper baking cups.
In a bowl, combine flour, sugar, baking powder and salt (cinnamon).

In another bowl beat the egg with a fork or whisk. Add milk and vegetable oil. Mix well.

Wash, peel, and core 1 apple. Chop fine. Add to liquid mixture.

Stir wet and dry ingredients together. Stir only until dry ingredients are moistened. Over mixing causes toughness and tunnels.

Fill muffin cups 2/3 full. Sprinkle tops with streusel topping. Bake 18-20 minutes.
