Molasses Oatmeal Bites

1 1/4 cups rolled oats1 tsp baking powder1/8 tsp table salt1 large egg, beaten1/2 tsp vanilla extract1/2 cup molasses1/4 cups all-purpose flour1/4 cup raisins1 banana, mashed
Pre-heat oven to 350* and line baking sheet with parchment paper.
Mix banana, molasses and egg together in one bowl and the dry ingredients in another.
Stir wet ingredients into dry ingredients until there is an even consistency throughout.
Spoon about one tablespoon of the mix onto the parchment paper. They shouldn't spread much during baking, but leave some room on each side.
Cook for about 10 to 12 minutes, or until they are solid. You may have to test them with a spatula to see if the bottoms are cooked, since the tops will stay shiny.

Even since I learned that calcium supplements can harden one's arteries, I have been looking for recipes using Blackstrap Molasses which contains a lot of calcium. Thanks for providing this super recipe. The cookies are very moist and delicious. They are not too sweet but satisfying. - 2/24/16
